We make Smashed Avocado Toast all of the time. Like literally, all the time. Breakfast. Lunch. Dinner. And even sometimes as just a snack. It is all fair game in our house! Avocado Toast is quick, simple, delicious, and bursting with nutrition. Plus the healthy fats from the avocado keep you full and energized for hours. This smashed avocado toast recipe with veggies will make you want avocado toast all the time too!

Healthy Breakfast Options

Breakfast can be a tricky meal for many reasons. The first issue is time. Breakfast is usually rushed and all you want is to grab something quickly- a granola bar will have to suffice! Grabbing breakfast on your way out the door is probably something we have all done, many, many times but that is probably not the healthiest way too eat and almost certainly not the most delicious.

There is also the breakfast debate between sweet and salty. Breakfast is that rare meal that can go both ways – salty, savory eggs and bacon or maybe choose syrup laden waffles? That is a tough choice you have to make each morning. Who can make such a choice so early in the day?!

This choice can also be linked to deciding between a healthy breakfast and a not so healthy breakfast. Will your breakfast include vegetables and whole grains or are you going straight for the chocolate chips pancakes with whipped cream? What to do!?!

Healthy Avocado Toast Recipe

I created this recipe in the spirit of pursuing a healthy breakfast that is not eaten in a rush but in a civilized manner, at a table, with a fork and plate. It sounds crazy, I know! I just really wanted a breakfast that would be good for me, not to tricky to make and also make me excited to get up in the morning (no one is ever excited for breakfast when it consists of eating dry cereal out of the box because you are late to work).

Avocado toasthas been a super trend in the past few years and for good reason. It’s simple, tasty and you really can do so much to jazz it up. So that is what I planned on doing. I wanted to add some extra interest to avocado toast. The toast part was the first step.

If you have never heard of Ezekiel bread, then it is something you have to try. The bread is made using grains that have been allowed to sprout which then gives the bread more protein, fiber and absorbable vitamins and minerals. Sounds like this is a miracle bread!

Sprouted flour, which is what Ezekiel bread is made from, is so much more beneficial than regular old flour. You can make your own sprouted flour at home if you are so inclined! It is great for making breads, cakes and muffins too. Just about anything that you can bake with regular flour can be made with sprouted flour! However, baking with sprouted flour will give your food a different texture, making it much stiffer and chewier. Yet when you think of all the health benefits you will be getting, it is definitely worth the change! Check out this video that will really get you hooked on sprouted flour.

Oh, I forgot to mention, Ezekiel bread also has no sugar or preservatives. It is seriously the way to go (but, yes, normal bread will work just fine in this recipe if you do not have Ezekiel bread). My breakfast bread game was already off to a great start!

Avocado Toast With Egg

I think eggs are a must for breakfast, it just makes sense -protein, omega-3’s and the way that creamy yolk from an over easy egg makes a tasty sauce…yum. Eggs are just required when you are making any kind of breakfast with toast. So fry up those eggs, however you’d like them and move on to choosing a perfect avocado.

Avocados are perfectly ripe when they give a little bit when squeezed. You don’t want an avocado that is rock hard or completely mushy. Think of the texture of a ripe peach or pear and that is the same texture you need in your avocado. It will smash perfectly onto your toast!

When you are choosing avocados at the store, try to grab a few that are at different ripeness levels. Pick one that is soft and ready to eat and then grab a few that are still a little hard. Those harder avocados will ripen in your home within a few days and be perfect for your avocado toast later in the week. You can also speed up the ripening process by placing the avocado in a brown paper bag along with a banana. Te ethylene gas that bananas omit will be trapped in the bag and cause the avocado to ripen. It’s like fruit magic!

Avocado Toast Toppings

Veggies, veggies, veggies – they are what make this recipe! Sure, you can opt for a simple avocado toast recipe when you are in a hurry of looking for a more toned down breakfast (check out this recipe for the best avocado toast recipe ever!), but when you really want your breakfast to be healthy, filling and loaded with delicious veggies, this recipe is the one to choose. Onion, peppers and asparagus are sautéed in healthy coconut oil and layered on top of the egg and avocado toast. Not only can I picture how pretty this breakfast will look, but it also just sounds mouth watering…is your mouth watering too?

I love peppers and they bring a lot of nutrients (and pretty color) to my AM meal but you can really go with any of your favorite vegetables. Sauté up some mushrooms, broccoli, or zucchini using the same method and you will have great results. Avocado toast with all sorts of toppings is the way to go!

Avocado Toast Meals

While I did create this with breakfast in mind, you really can have it any time of the day (gotta love a versatile recipe!). Yet when I wake up and am thinking of starting the day off on the right foot, I skip the sugary cereal, pass on basic eggs and definitely skip the granola bar. In fact, I now wake up voluntarily 10 minutes early just so I can make my avocado veggie toast. I just need it!

Breakfast no longer has to be full of difficult choices- it’s hard enough in the morning already! Take this recipe and fall in love with fancy breakfast that really isn’t hard to make. You will feel refreshed and ready to take on the day!

Description

Healthy sprouted wheat bread topped with tender veggies, filling avocado and a protein packed egg make this breakfast recipe the perfect way to start your day.

Ingredients

Scale

  • 2 slices Ezekiel bread
  • 2 eggs (fried)
  • 1 avocado
  • 1/2 purple onion, thinly sliced
  • 1/2 cup thinly sliced peppers (any color works)
  • 4 spears fresh asparagus (sliced in half)
  • 1 tablespoon coconut oil
  • 1/2 lime, juice
  • sea salt + black pepper

Instructions

  1. Melt coconut oil in a skillet over medium-high heat.Add onion, pepper, asparagus, and seasonings to skillet. Sauté vegetables for about 5 minutes. Add lime juice and sauté another minute or two.
  2. Toast bread then top with smashed avocado. Layer on the vegetables and fried egg then serve immediately.

Notes

  • To save some time in the morning, slice up your peppers and onions the night before. Store them in the fridge in an airtight container overnight and in the morning, you can just dump them right into the pan!
  • When you purchase your avocados, buy them at varying levels of ripeness (some very hard and some ready to eat). This way, they will continue to ripen through the week.
  • Try any of the following veggies for toppings: zucchini, tomatoes, cooked sweet potato, yellow squash or green beans
