Hello friends and Happy Cinco de Mayo!
I realize I’m late to the party, I apologize! But better late than never right?! I had to share these Mexican Chocolate Sandwich Cookies with Dulce de Leche Filling because, well…chocolate and dulce de leche! Need I say more?
Some technical difficulties prevented me from posting these on Monday as originally planned, but I really wanted to share them because they are a Cinco de Mayo favorite!I think once you taste these beauties you’ll forgive me! Plus, they’re not just perfect for Cinco de Mayo, they’ll satisfy your sweet tooth any day of the week!
So, do you guys have anything planned to celebrate the holiday today? Something special for dinner or perhaps a special margarita to toast the day? We’ll be dining on my favorite crispy pork carnitas tacos, toasting with a yummy margarita and enjoying one too may of these cookies for dessert! (Go away bathing suit season!)
I can’t resist the rich, chocolatey flavor of these chewy cookies. They’ve got a hint of cinnamon and a pinch of cayenne to spice it up. Two of these babies sandwiched with some thick, rich and delicious dulce de leche and my taste buds are screaming muchas gracias!! (not exactly what my bathing suit is screaming!)

Mexican Chocolate Sandwich Cookies with Dulce de Leche Filling

These Mexican Chocolate Sandwich Cookies with Dulce de Leche Filling are rich and spicy and such a treat!

Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened Dutch Process Cocoa Powder
- 1/2 tsp. kosher salt
- 1/2 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/8 tsp. cayenne powder
- 1/2 cup (one stick) unsalted butter, softened
- 1 1/2 cups granulated sugar, plus additional for sprinkling
- 2 large eggs, room temperature
- 1 tsp. vanilla extract
- 1 13.4 ounce can Nestle Dulce de Leche
Instructions
Preheat oven to 325 degrees. Line a large baking sheet with parchment paper. Set aside.
In a medium bowl, whisk together flour, cocoa powder, salt, baking soda, cinnamon and cayenne. Set aside.
In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugar on medium speed. Add eggs, one at a time and vanilla and mix until well blended.
Reduce speed to low and gradually add flour mixture.
Using a small ice cream scoop (1 1/2 inch) drop dough 2 inches apart onto prepared sheet.Sprinkle tops with additional granulated sugar.
Bake for 13-15 minutes or until surface shows some cracking. Cookies should be on the soft side.
Remove from oven and cool on wire racks.
Assembling cookies: Spread a heaping tablespoon of dulce de leche filling on the bottom of one cookie and top with another cookie, sandwiching together.

Oh stop it. I’m DYING over these bc. I literally OBSESS over dulce de leche, as does my mom who firmly believes dulce de leche is best enjoyed alone. She would be happy to see you went straight dulce de leche for the filling. I may need to whip up a batch of these for her this weekend!

In Argentina these are covered with chocolate and we call them “alfajores”. It´s the national treat, and we are real dulce de leche fans ;)

Loving this recipe! A friend brought them over one day recently and now I’m in the kitchen making my own batch! Just curious…do you know how well the dough would freeze? Thinking about scooping onto the baking sheet as usual and freezing some so I can make a few at a time.

So glad you are enjoying them Melissa! I often bake the cookies and then put in ziploc freezer bags and freeze. Then when I’m hungry for one or two, (or a dozen!) I pop them out of the freezer and fill with the dulce de leche filling. Enjoy!

I’m late to the party, I found these on Pinterest while searching for Mexican desserts for my birthday party. I decided to try them out for coworkers first, and they did not disappoint! The flavors are fantastic together! I made a double batch and got two dozen cookies, so I may have made them bigger than the recipe suggests. These will be featured at my party for sure!

I would make the chocolate cookies ahead and freeze them and then just unfreeze a day ahead or day of and then add the dulce de leche filling and sandwich together. Enjoy Dianne! These are always a hit!

Hi Patricia. The cookies will spread by themselves, so just use a cookie scoop and place on a tray a few inches apart and sprinkle tops with sugar. Enjoy!

These were unfortunately way too sweet for my taste. I was excited about them, but I think 1/4 cup of sugar would’ve been plenty, and maybe double the cayenne as it didn’t really was too little to make even a subtle difference.

I made these again but with 1/2 cup sugar and 1/2 tsp cayenne and they were incredible! I should have known to lower the sugar originally, my sugar tolerance is much lower than most people’s haha. They were soft and chewy and the sweet and spicy flavors go perfectly together. My boyfriend preferred the original recipe as he likes things on the sweeter side.

I told my friends I was going to make these and they their mouths began to water without even tasting them! Now I have made and tasted them I am not sure that I can give them away;) Extremely deliciously satisfying-YUM, I used a canned Dulce de leche and it was a little thin for filling, so I placed in the fridge between batches to firm up. That helped.

These cookies are absolutely addicting. I’ve never made them with cayene because it’s hard to find here, but even without it, the combination of the warm chocolate spiced cookie and dulce de leche is to die for. I make them regularly for our youth group, and they are hands down the group’s favorite–even above chocolate chip cookies!
