Ok, I hope these are not too crazy for you!?

I am a huge green tea fan, but strangely only recently got really into matcha, and how I could use it in recipes too.

I make waffles for the kids a lot. They have been going through a waffles vs pancake phase. I have been going through a toasted green tea in the morning phase. One recent morning I was sipping my green tea while making their waffles and it occurred to me that I should just put the matcha IN the waffles. Well, turned out that was a good call- even the girls thought so.

However, it seemed strange to drown these pretty waffles in syrup (I know, I never thought I would hear myself say such a thing) so a pretty fruit salad and a sprinkle of powdered sugar went over the top instead. It was the perfect topping for these waffles, and the kids just folded them over with all of the fruit and sugar trapped inside and ate them like a sandwich. You have to admire their creativity!

I hope you enjoy these as much as we did! If you do want more of a “sauce” on top – I recommend this raspberry sauce!

Matcha Waffles

Ingredients

  • 1 cup unsweetened coconut milk
  • 1 tablespoon apple cider vinegar
  • 2 cups gluten free all-purpose flour
  • ¼ cup sugar
  • ½ cup toasted unsweetened shredded coconut
  • 2 teaspoons baking powder
  • 1 tablespoon matcha green tea powder
  • 1 teaspoon kosher salt
  • ¼ cup melted coconut oil
  • ½ cup gluten free beer
  • Fruit and powdered sugar to serve

Instructions

  1. Preheat a waffle iron.
  2. In a bowl, combine the coconut milk and vinegar and set it aside.
  3. In the bowl of a standing mixer, combine all of the dry ingredients and then whisk in the coconut milk and the coconut oil and beer and beat until you have a smooth batter (studded with the coconut).
  4. Spray the waffle iron with coconut oil spray and spoon the batter into the hot waffle iron and cook until golden brown, about 3 minutes. Transfer to a plate and serve hot with powdered sugar and fresh fruit. (Or keep the waffles warm in a 300 degree oven until ready to serve.)
