Instead of using traditional mayonnaise for your low carb sandwiches, wraps and dressing base, consider using bacon mayo. Bacon mayonnaise is creamy like regular mayo but it is bacon flavored.

Also called baconnaise, this is a keto condiment to make as long as you have saved up your leftover bacon grease from all bacon you fry every morning on your low carb diet.

What is bacon mayo made of?

Bacon mayo is primarily made out of bacon grease and egg yolk. The egg yolk helps to form an emulsion. Vinegar or an acid like lemon juice is added to the egg yolk to help keep that emulsion together. Bacon grease is very slowly drizzled into the egg yolk while mixing constantly. If the bacon grease is added too quickly the emulsion can break and you will get an oily liquid instead of mayonnaise.

After all the bacon grease is added to the egg yolk and it has a mayo like consistency, you can add other ingredients to enhance the flavor of the bacon mayonnaise.

In this recipe, we add Dijon mustard. Consider adding any of the following to help liven up the flavor of your bacon mayo:

  • cayenne pepper
  • red pepper flakes
  • sriracha sauce
  • hot sauce
  • liquid smoke
  • minced red onion
  • minced garlic
  • bacon bits
  • chives

    Add yolks and apple cider vinegar to a food processor and pulse to combine.

    Very, very slowly drizzle in the liquid bacon grease with the food processor on.

  • Methods for making bacon mayo

    My preferred method for making bacon mayonnaise is to use a food processor to mix the egg yolk and bacon grease together. This mini food processor by Cuisinart is my favorite. It has a tiny hole on the top to help slowly drizzle in the liquid bacon grease.

    If you don’t have a food processor, you can use an immersion blender or a good ol’ whisk and use your hands to make the baconnaise.

    How to store bacon grease?

    After frying bacon, strain your bacon grease through a fine mesh strainer to get all the cooked bacon bits out. Store in a stainless steel container or glass jar.

    Bacon grease will stay fresh in the refrigerator for about six months as long as all the meat has been removed. You can also freeze bacon grease.

    You can store leftover bacon grease at room temperature; however, it will go rancid faster. If storing at room temperature, keep the bacon grease in a dark, tightly sealed container and strain the bacon bits out to maximize freshness.

    I use a strainer and pour the bacon grease into a small glass mason jar. Or you can use one of these nifty bacon grease containers with a built in strainer that you can purchase. It is made out of stainless steel to keep light and heat from causing the fat to go rancid.

    If you notice an unpleasant odor, the bacon grease has gone bad and should be thrown out.

    Is bacon mayo carnivore diet approved?

    If you are on an all meat diet like the carnivore diet, bacon mayonnaise is one condiment you can enjoy and slather on everything. I recommend still using the apple cider vinegar to help keep the emulsion together; however, you can omit the Dijon mustard from the recipe if you are eating carnivore keto.

    How many carbs are in bacon mayo?

    0 carbs... the answer is 0 or no carbs! This goes for net and total carbs. Enjoy!

    How do I store the bacon mayo in the fridge?

    I use a glass mason jar. If you prefer squeezable bottles, they are available on Amazon and at most grocery stores.

    6. Recipe was perfection!!! ? Thanks for sharing!! I used 1/2 melted butter & 1/2 bacon fat for more of a hollandaise sauce mayo. Was utterly delish! My kiddo loved it. (We also added an extra teas of lemon + vinegar, because we like it on the tangier side) Just what we’re used to. 😉

    8. My emulsion broke using 1 cup of bacon grease. I think 1/2 or 3/4 cup would have been better.

    10. I tried making this and had two failures. First time round I used an emersion blender and the second time I used a food processor. Both times it became soupy, never getting thick like a mayo. Any advice? I was so bummed when it didn’t work.

      1. It sounds like you emulsion keeps breaking. You have to all the oil slowly to the egg yolk while mixing.
