This recipe is perfect for anyone asking what exactly is fudge.

If you are like me then you may think of fudge as a kind of candy.
Maybe fudge is a a cross between candy and something baked that you may especially enjoy during the holiday season.

Technically, fudge is a candy made with sugar and dairy.

There could be more than one kind of dairy such as butter or milk.
However, adding other ingredients to fudge is certainly what makes it taste even better.

This fudge recipe is based upon recipes made with confectioners sugar.

However, we will be using sugar free confectioners sugar to make this recipe.
I refer to this as 'powdered sugar' by the way, as technically they are the same thing.

Finding sugar free powdered sugar is rather easy.

You can easily find sugar free powdered sugar online.

  1. Make this fudge recipe vegan. Simply sub in a nut milk for the milk and coconut oil for the butter. Note that you may need to make a few adjustments for the texture or flavor by using alternative ingredients.
  2. Using whipping cream instead of milk can give the fudge a smoother texture. You may need to make a slight adjustment in your dry ingredients as needed.

Here is how to store fudge.

I like to use parchment paper or wax paper to make my fudge on. Then the fudge can be easily transferred to a an air-tight container for and stored in the refrigerator for a few weeks. The paper also acts as a separation between layers of fudge to help the fudge stay apart.

The ingredients needed to make sugar free fudge

How to make sugar free maple fudge

  • Prepare a square baking dish for nonstick. Some folks like to use butter however, I am a fan of parchment paper as it is useful throughout the process. You could use another shape of baking dish however, your fudge piece may be smaller or large in size depending on the size of the dish.
  • Use a whisk or sifter to sift the sugar free powdered sugar into a large mixing bowl (whisk attachment can work on low speed).
  • To make this recipe on a stove top: simply heat the ingredients in a saucepan on low heat, stirring constantly. When the ingredients appear to be combined and there are no clumps, transfer the fudge to your prepared baking dish. Refrigerate for at least two and a half hours or until firm before cutting into squares.
  • Make this recipe in a microwave- place the ingredient in a microwave safe bowl. Heat on full power, stirring every thirty seconds, until until smooth and combined. Transfer to the prepared baking dish and refrigerate until firm.
  • Note- if you are adding nuts, they should be stirred in after the heating process and before the transfer to the baking dish. Also, substituted ingredients can alter the heating and firming steps. Lastly, when adding the liquid ingredients, start with the smallest amount and add additional as needed for consistency (you may need more or less milk depending on the consistency of your fudge).

Sugar Free Maple Fudge

Sugar free maple fudge that tastes really good!

Ingredients

  • Nonfat Dry Milk in powder form- 1 ⅓ cups.
  • Tap Water that is one the cool side- ½ cup.
  • Sugar Alternative in granular form- ½ cup.
  • Butter- 1 cup .
  • Brown Sugar Alternative- You can find a selection of brown sugar alternative choices online. - 2 cups equivalent to regular brown sugar.
  • Maple Extract- 1 ½ teaspoons.
  • Vanilla Extract- ½ teaspoon.
  • Sugar Free Powdered Sugar- You can make your own sugar free powdered sugar using this recipe or find some sugar free powdered sugar online.- 2 cups.

Instructions

  • In a microwave-safe cup or bowl, mix together your nonfat dry milk and your water. Microwave this on high for one minute- stirring every 15 seconds. Do not allow to boil- if this starts to boil you can quit microwaving sooner than one minute.

  • Add in the granular sugar alternative and stir until you have made a paste. Cover this and set this aside in the refrigerator and allow to cool- overnight would be best.

  • When ready to make your fudge, prep a square pan for nonstick. I like to use butter foil or parchment to prevent sticking.

  • In a saucepan over medium heat, combine together your butter (cut into tablespoons), the refrigerated mix that your prepared earlier, and the brown sugar alternative. Allow this to come to a boil, stirring constantly. Cook this for 10 minutes and then remove from the stove.

  • Obviously this will be hot so please take precautions. Add your remaining ingredients and beat on medium speed until smooth (use a handheld mixer for about two minutes).

  • Spread this mix into your prepped pan and allow to cool before cutting into squares. Store covered in an air tight container.
