Warm Chocolate Melting Cake. Just hearing the name gets me excited. Why? Because it is by far the most loved dessert on Carnival Cruise Lines, and just thinking about its rich, chocolate-y gooiness (yes, I'm making up my own words here!) makes me want to cruise ASAP.
Normally, that would be the only way you could enjoy this decadent dessert-- BUT, I was lucky enough to get the OFFICIAL recipe from Carnival on my recent cruise aboard the Carnival Magic.
What makes the Warm Chocolate Melting Cake so special is its texture. While the cake looks firm on the outside, the inside is warm and fudgey; when mixed with a spoonful of vanilla ice cream, the combination is simply heavenly!

Hi! Yes, that dessert is to die for. Ok, just a couple maybe somewhat dumb questions. The sugar and flour, are those by weight? Or with a dry measuring cup. Also, what size ramekins do you use??

Microwave: Place cakes on a microwave-safe plate and heat in microwave for 25 seconds. Oven: Preheat oven to 350ºF with a rack in the center. Place cakes on a rimmed baking sheet. If frozen, bake for 17 minutes.
semi-sweet chocolate into same-sized pieces and place in a microwave-safe bowl. Heat the chocolate in the microwave for 30 seconds and stir. Let the chocolate cool until it's no longer warm to the touch (but not re-solidifying) before continuing. Beat butter until creamy, then drizzle in melted (cooled) chocolate.
Wrap well in plastic wrap and store in an airtight container in the freezer for up to 1 month. You can thaw frozen lava cakes overnight in the fridge and reheat them in the oven at 350°F for about 8 minutes. Alternatively, you can reheat them from frozen in a preheated 400°F oven for 15-18 minutes.
- Place your lava cake on a microwave-safe plate and cover the cake with a piece of damp paper towel. On medium heat, warm the cake in 10-20 second intervals. Once hot, remove the paper towel and serve.
Put the chocolate in a heatproof bowl. Microwave for 20 seconds. Check the chocolate, stir and keep cooking and checking every 5 seconds or until it has completely melted.
Microwave the milk chocolate for 30 seconds (or 20 seconds if at a high temperature) then take the bowl out and give it a stir. Place the bowl back in the microwave and repeat the process of cooking for 30 seconds, stopping, stirring and returning to the microwave until the chocolate has melted.
How Long Does It Take For Melted Chocolate To Harden? Generally, chocolate takes 20-30 minutes to harden and set at room temperature. Using a fridge or freezer can significantly reduce the time it takes for the chocolate to set fully. (Click here if you want to learn how to melt chocolate).
You may have noticed that some chocolate cake recipes utilize hot water or even hot coffee. When hot liquid is combined with the cocoa powder, it helps to dissolve and 'bloom' the cocoa to bring out as much flavor with as few cocoa lumps as possible.
Coat in Flour: Before adding the chocolate chips to your batter, toss them in a little bit of flour. Just a light dusting will do. This helps to absorb any excess moisture and gives the chips something to grip onto, helping them to stay suspended in the batter during baking.
If you over mix the cake batter, your molten lava cake is going to collapse or sink in. Reason being when you over mix the batter, you are incorporating too much air bubble into the batter resulting it in losing its structure to hold the cake together. Secondly, chocolate lava cake is very time sensitive.
If you bought your Chocolate Lava Cake directly from a bakery or grocery store, it will usually stay fresh for 1 to 2 days at room temperature or up to one week in the fridge. If the cake is packaged and unopened, it can last up to the 'best by' date indicated on the package, which is typically a few months.
Bake them too long and they lose their molten center, turning into a regular old chocolate cake. Don't bake them long enough and the whole thing collapses in on itself, resulting in an utter mess.
Heat the cake in the microwave on medium power for 15-30 seconds. Check the cake after 15 seconds to see if it's heated through. If it's not, continue to heat in 5-10 second increments until it's warm.
Simply bake the cake in a microwave-safe glass dish on the rotating platter. It takes 5–7 minutes to bake a cake at the standard temperature. Therefore, pay attention to the timings; otherwise, the texture may alter significantly. The cake may potentially be too dry.
Even better, Trader Joe's Chocolate Lava Cakes are a snap to prepare: just microwave for less than a minute and you're good to go! (Cooking instructions for a conventional oven are on the package.)
